Mango Burritos!

Don't be deceived by the title of this recipe. This is a delicious blend of sweet & spicy and is also surprisingly pretty healthy! I made up this Recipe and I hope you all enjoy it as much as me & my family did!



Ingredients
  • 1 lb Ground Turkey
  • 2 cups White Rice
  • 1 1/2 - 2 cups Santa Barbara Mango, Peach Salsa
  • 1 can Re-fried Beans
  • 1 cup Frozen Corn (Frozen corn tastes the best but if you do not have it then add 1 can Corn)
  • 1/4 cup Sour Cream
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 1/2 teaspoon seasoning salt
  • dash of pepper
  • 6 Large Whole Wheat Tortillas
  • 1 cup Mexican blend cheese
  • 1/2 cup crushed tortilla chips (optional)

Directions

Preheat Oven to 350. Place rice in rice cooker. Cook. While rice is cooking place ground turkey in frying pan. While cooking add ground cumin, chili powder, seasoning salt & pepper. Brown turkey. Drain. Add Mango Salsa, re-fried beans, corn & sour cream to cooked turkey. Cook on med-low heat until rice is done. When rice & turkey/mango mixture is done place even amount of rice and turkey mix on whole wheat tortilla. Repeat until baking dish is full (about 6 tortillas fit in a 9 by 13 baking dish) when baking dish is full with burritos there will be extra turkey mixture and a little rice. add remaining rice to turkey mixture. spread over the top of the burritos. Add cheese on top and then top with tortilla chips. Bake at 350 for 20 minutes. Enjoy!

I used holiday tortilla chips that were green & red!! It makes it look more festive! :)
